Recipe corner: Jackfruit tacos

Bring a little tropical flair to your table with these jackfruit tacos. The tender, spice-coated jackfruit packs all the flavour and texture of pulled meat, without the heaviness. Each serving gives you nearly 11g of gut-friendly fibre, making them as nourishing as they are delicious! Top with your favourite fresh veggies and you’ve got yourself a vibrant, feel-good meal that’s perfect for sharing!

Ingredients list:

  • 2 cans (560 grams each) young green jackfruit in brine or water, drained and rinsed

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1 teaspoon chili powder

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon dried oregano

  • Salt and pepper to taste

  • 1/2 cup vegetable broth or water

  • Juice of 1 lime

  • 8 small corn tortillas

  • Optional toppings: shredded lettuce, diced tomatoes, sliced avocado, chopped cilantro, salsa verde

Directions:

  1. Start by shredding the jackfruit with your hands or a fork so it looks like pulled meat. Toss out any tough core pieces or seeds.

  2. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, cooking for a couple of minutes until soft and fragrant.

  3. Stir in the shredded jackfruit along with cumin, chili powder, smoked paprika, oregano, salt, and pepper. Mix well so the jackfruit soaks up all those spices. Cook for 5–7 minutes, stirring now and then, until it starts to brown slightly.

  4. Add the veggie broth (or water), stir, then lower the heat. Cover and let it simmer for 10–15 minutes until the liquid’s gone and the jackfruit is tender. Squeeze in some lime juice and adjust seasoning to taste.

  5. While the jackfruit simmers, warm up your tortillas. Either wrap them in a damp paper towel and microwave for 30 seconds or toast them in a dry skillet for about 30 seconds per side.

  6. Assemble time! Divide the jackfruit filling into your tortillas and load them up with your favourite toppings: lettuce, tomato, avocado, cilantro, salsa, or anything else your heart desires!
